Albesi Cookies

Yield 50 cookies (100 pieces)

1 C toasted hazelnuts, rubbed to remove most skin
1 1/2 C sugar
1 t baking soda
2 T cocoa powder
2 egg whites, room temperature
1/4 C dry red wine
8 oz melted chocolate to fill cookies

Preheat oven to 325. Butter parchment. Grind hazelnuts, sugar, baking soda, and cocoa until fine. Add egg whites, and wine and pulse until just mixed in. Pipe batter in 1 inch rounds, leaving 3 inches between. Let rest for one hour before baking. Bake for 10 minutes. Let sit for one minute and cool on rack. Sandwich with melted chocolate.
